Recipe
4 eggs yolks
70g butter
3 Lemons
100ml Lemon Juice
150 grams sugar
Step 1 skin lemons to get the golden zest | squeeze emons & sift the seeds out
Step 2 Blend yolks and sugar till pale yellow - around 10 mins medium speed
Step 3 Pour all mixture into a pot and bring to low fire and stir with whisk constantly - around 7mins
Step 4 Sauce forms curd and coat spoon well. Remove from fire and leave to cool
